Enzymes are biomolecules that catalyze, increase the rates of chemical reactions. Enzymes bind temporarily to one or more of the reactants of the reaction they catalyze and they lower the amount of activation energy needed, thus speed up the reaction.

Lactase can be extracted from yeast and fungi. The specific use of lactase is to break down lactose in milk to make it suitable for people with lactose intolerance.
